- 300 g of mushrooms

- 2 garlic cloves, crushed
- 1 tablespoon of flour
- 200 ml (¾ cup + 1 tablespoon) of white wine
- 200 ml (¾ cup + 1 tablespoon) of heavy cream
- 1 teaspoon of mustard
- Chopped fresh parsley
- Fine salt
- Black pepper

### Instructions

1. In a large pot, place the tongue with the water, onion, carrots, celery, bay leaves, and peppercorns. Simmer for 2 to 3 hours until tender when pierced with a fork. Remove, let cool slightly, and peel off the outer skin with a knife.
