1. Preheat the oven broiler to 180°C (356°F). Spread the mixture in a gratin dish, arrange the rest of the berries on top, sprinkle with the remaining sugar, and broil for 10 to 15 minutes until golden and set. Serve right away.

## Additional Tips

### Dry fruit

Use fresh, well drained berries so the dessert does not release liquid.

### Cold base

Make sure the cream is completely cold before adding the whipped cream.

### Watch the broiler

Sugar browns fast; check often during the last minutes.

### Serve warm

The contrast of the warm top and cool cream is best right out of the oven.

| Original ingredient | Substitute | Ratio | Flavor note |
| --- | --- | --- | --- |
| Mixed berries | Raspberries and blackberries | 4 cups | Sweet and tart |
| Fresh berries | Frozen berries, drained | 4 cups | Thaw and drain well |
| Whipped cream | Mascarpone | 1 cup | Richer |
| Granulated sugar topping | Brown sugar | To taste | Caramel notes |

## Frequently Asked Questions (FAQs)

### 1. Why must the cream be cold before adding the whipped cream?

Warm cream melts the whipped cream instantly. It must be completely cold so the whipped cream folds in and keeps the mixture light.

### 2. Can I use frozen berries?

Yes, but thaw and drain them very well first; excess water can make the cream weep in the oven.

### 3. Which berries are best for a gratin?

Raspberries and blackberries balance sweetness and acidity; blueberries also work, though firmer ones may need slightly longer.

### 4. How is it different from crème brûlée?

Crème brûlée is a denser baked custard caramelized just before serving. This gratin has a lighter, mousseline style cream gratinated with the fruit, for a fresh, fruity flavor.

## Benefits of Berries

Berries provide vitamin C, vitamin K, and folate, plus minerals such as potassium and magnesium.

## Did You Know?

The word gratin comes from the French gratiner, to brown the surface of a dish, a cooking technique that gives its name to the result.
