Calafate sour is considered one of the best-kept secrets of the Carretera Austral, a cocktail originally created by Magallanes-born writer and bartender René Andrades, built around the tart, deep-purple native berry of southern Chile.

Here we share two versions, one made with calafate liqueur and the other with pisco and calafate syrup, two classic examples of the many products made from this traditional fruit of southern Chile.

## How to Make Calafate Sour?

Calafate sour blends a calafate-based spirit, either liqueur or pisco with syrup, with fresh lime juice and egg white, shaken hard with ice until a light foam forms on top.

1. Serve the calafate sour with pisco immediately, well chilled, optionally garnished with a slice of lime and whole calafate berries.

## Additional Tips

### Use Powdered Sugar for the Pisco Version

Using powdered sugar instead of granulated sugar in the pisco version ensures the sweetener dissolves completely, leaving no gritty texture in the cold cocktail.

### Serve Immediately After Blending

The cocktail should be served right after blending so it’s enjoyed well chilled and so the foam crown, if using egg white, doesn’t dissipate before it reaches the table.

### Order Calafate Syrup Online If You’re Not in the South

If you don’t live in the Magallanes region, calafate syrup can be found through online stores with home delivery, making the pisco version accessible anywhere in Chile.

| Substitution | Use instead of | Effect |
| --- | --- | --- |
| Aquafaba | Egg white | Vegan-friendly foam |
| Blueberry syrup | Calafate syrup | Similar tart-sweet profile |
| Regular lime | Pica lime | Slightly less aromatic, still tart |
| Granulated sugar, well dissolved | Powdered sugar | Works if shaken thoroughly |

## Frequently Asked Questions (FAQs)

### 1. What does the optional egg white add to the cocktail?

The egg white is an optional ingredient that, when vigorously blended, creates a light foam crown on the cocktail’s surface, improving both mouthfeel and presentation.

### 2. What dishes pair well with calafate sour?

It pairs very well with Magallanes-style meats like Patagonian lamb, king crab empanadas, or boards of smoked cheese and local charcuterie.

### 3. Where can I buy calafate syrup or liqueur?

If you don’t live in the Magallanes region, calafate syrup and liqueur can be found through online stores with home delivery.

### 4. Can I make calafate sour without alcohol?

Yes, replace the liqueur or pisco with calafate syrup diluted in sparkling water, keeping the lime juice and egg white for a similar tart, foamy mocktail.

## What Is Calafate Sour?
