### Dough and Frying Ingredients

- 1 kg (8 cups) of all-purpose flour
- 200 g (1 cup) of lard
- 2 cups of warm water
- 1 tablespoon of salt
- 1 teaspoon of baking powder
- Oil for frying

2. Mix quickly, adding more warm brine as needed, to form a firm dough, and knead vigorously by hand for 5 minutes until smooth and pliable. Wrap the dough in a kitchen towel to keep it warm and let it rest for 15 minutes.

1. On a floured surface, roll the dough to about 3 mm (1/8 in) thick and cut discs of about 20 cm (8 in), or any size you like. Place a spoonful of tuna filling and some pieces of cheese in the center of each disc, leaving enough margin to close them.

1. Fold the dough over the filling into a half-moon and seal the edges with your fingers or a fork. Heat plenty of oil in a pot or skillet over medium-high heat to 170 C (338 F). Fry the empanadas for about 2 to 3 minutes, turning them until golden. Lift them out with a slotted spoon and drain on paper towels.

### Drain the tuna thoroughly

If you use canned tuna, press out the liquid and pat it dry on a clean cloth. A wet filling softens the dough and makes the empanadas burst while frying.

Fry at 170 to 175 C (338 to 347 F). Above 185 C the outside burns before the dough cooks, and below 160 C the empanadas absorb oil.
