Chilean grilled entrecôte, or entrecot a la parrilla, is a bone in rib steak grilled over hot coals, seasoned only with coarse grill salt, and turned several times until the juices rise to the surface, then rested and served. It takes 15 minutes of preparation and about 30 minutes on the grill, and serves 2.

It is a tender, flavorful cut from the back of the animal, ideal for the barbecue and best enjoyed with a good Chilean red wine.

## How to Grill Entrecôte?

Grilling entrecôte can seem tricky at first, since the bone tends to dry the meat around it. The steaks go onto a hot grill for 5 minutes per side with salt, then are turned again to protect the bone side and cooked until juices appear on top, rested, and served.

## Homemade Chilean Grilled Entrecôte Recipe

### Ingredients

- 2 beef entrecôte steaks (bone in rib steaks), at least 2 cm thick
- 4 boiled potatoes, to serve
- Coarse grill salt

### Instructions

1. If the meat is frozen, thaw it in the fridge 24 hours ahead. Unwrap the steaks and let them rest for 5 minutes, massaging them gently. Once the grill is hot, place the steaks on the grate for 5 minutes, turn them, add grill salt to taste, and cook for 5 more minutes.

1. Turn the meat again so the bone does not overheat, taking care not to dry it out, salt the remaining side, and cook until juices start to appear on top. Turn the steaks one last time and cook for another 5 minutes, until the juices appear again.

1. Once they reach the doneness you like, take them off the heat and let them rest on a cutting board for a couple of minutes. Serve right away with rustic potatoes or salads, ideally with a good Chilean red wine.

### Choose thick steaks

Pick entrecôtes at least 2 cm thick. Thinner steaks dry out too quickly on the grill.
