Chilean honey bread, or pan de miel, is a spiced loaf made with flour, honey, condensed milk, rum, cinnamon, clove, and nutmeg, leavened with baking soda and baking powder and dusted with powdered sugar. It takes 15 minutes of preparation and about 45 minutes in the oven, and serves 6.

It is an old Chilean home recipe, easy to make and good at any time of day and any season, especially with a cup of coffee or hot chocolate.

Pan de miel needs no yeast or rising time. The egg, butter, honey, condensed milk, water, spices, vanilla, and rum are blended until smooth, mixed into the flour with the leaveners, kneaded briefly, pressed into a loaf pan, and baked until lightly golden.

### Ingredients

- 500 g (4 cups) of all purpose wheat flour
- 200 g (⅔ cup) of honey, softened
- 150 ml (⅔ cup) of water
- 100 ml of sweetened condensed milk
- 2 tablespoons of rum or Chilean pisco
- 1 tablespoon of butter, softened
- 1 tablespoon of ground cinnamon
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking soda
- 2 teaspoons of baking powder
- ½ teaspoon of ground cloves
- ½ teaspoon of ground nutmeg
- 1 egg
- Powdered sugar, for dusting

### Instructions

1. In a blender, blend the egg and softened butter for 10 to 20 seconds until combined. Add the softened honey, condensed milk, water, cinnamon, cloves, nutmeg, vanilla, and rum and blend again until smooth. Set aside.

1. In a medium bowl, sift the flour with the baking soda and baking powder and mix with a wooden spoon. Add the blended mixture and stir until everything comes together.

### Why both baking soda and baking powder

Honey is acidic, so the baking soda reacts with it and releases carbon dioxide, which helps the dough rise and gives the bread a deeper golden color. The baking powder provides the rest of the lift.
