Chilean pizzetas are small homemade pizzas, 7 to 8 cm (about 3 inches) across, made with a dough of flour, yeast, water and oil and topped with tomato sauce, cheese and oregano. They take 1 hour and 30 minutes of prep, including 1 hour for the dough to rise, and 30 minutes of baking. One batch of dough makes 30 to 35 pizzetas, and they can be frozen ready to bake.

Pizzetas are a classic at birthday parties in Chile, next to sándwiches de miga, crustless party sandwiches, cookies and the cake. They are also served at once, the Chilean afternoon tea, and at casual get-togethers because they are eaten in two or three bites. Making them at home costs less than buying them by the box and lets you choose the cheese and toppings. The dough needs no stand mixer or experience, only an hour of rest to rise.

## How to Make Mini Pizzas?

You work with a soft bread dough rolled out thin, so the pizzetas come out crisp underneath and fluffy in the middle. Baking the rounds for a few minutes before adding the sauce keeps the base from staying raw and soggy, the most common mistake with homemade pizzetas.

## Nutritional Information

## Homemade Mini Pizzas Recipe

**Preparation:** 1 hour 30 minutes
**Cooking:** 30 minutes
**Servings:** 6 servings (30 to 35 pizzetas)

### Ingredients

- 500 g (4 cups) all-purpose flour
- 10 g (1 tablespoon) dry yeast
- 300 ml (1¼ cups) warm water
- 3 tablespoons oil
- 1 teaspoon sugar
- 1 teaspoon salt
- 150 ml (⅔ cup) tomato sauce
- 250 g (9 oz) queso mantecoso, a mild Chilean melting cheese, grated
- 1 teaspoon oregano
- Chopped ham
- Sliced olives
- Oil for the baking sheets

### Instructions

1. Dissolve the yeast and sugar in the warm water and let it stand for 10 minutes, until foam appears. In a large bowl, mix the flour with the salt, make a well in the center and add the dissolved yeast and 2 tablespoons of oil.

1. Bring it together with a spoon, then knead by hand on a floured counter for 8 to 10 minutes, until the dough is smooth, elastic and not sticky. Shape it into a ball, coat it with the remaining oil, cover the bowl with a towel and let it rest for 1 hour in a warm place, until doubled in size.

1. Preheat the oven to 220°C (428°F). Punch down the dough, roll it out with a rolling pin to 0.5 cm (¼ inch) thick and cut 7 to 8 cm (3 inch) rounds with a cutter or a glass. Gather the scraps, roll them out again and keep cutting until all the dough is used.

1. Place the rounds on oiled baking sheets, prick them with a fork and bake for 5 minutes, just until dry on top without browning. Take them out and top each one with a teaspoon of tomato sauce, grated cheese, a pinch of oregano and, if you like, ham and olives.

1. Return the pizzetas to the oven for 8 to 10 minutes, until the cheese melts and the edges are golden. Serve warm. Leftovers keep in the refrigerator for up to 3 days and can be reheated for 5 minutes in the oven.

## Additional Tips

### Which Cheese to Use on Pizzetas

Queso mantecoso is widely used in Chile because it melts evenly and has a mild flavor that kids like. Mozzarella gives more stretch, and gouda adds more flavor. Grating the cheese yourself works better than bagged shredded cheese, which contains starch to keep it from clumping and does not melt as well.

### How to Freeze Pizzetas for a Party

The most practical option is to freeze the rounds after the first 5-minute bake, once cool and separated with parchment paper. That way they keep for up to 2 months. On the day of the party, take them out, add the sauce and cheese without thawing and bake for 10 to 12 minutes. You can also freeze them fully topped and baked, but the cheese loses some texture when reheated.

### Ideas for Varying Your Pizzetas

Besides classic ham and cheese, corn with cheese, sliced tomato with basil, sautéed sliced mushrooms and sliced hot dog sausage all work well, and the sausage is usually the favorite at kids’ birthday parties. For a grown-up get-together, use drained pebre, the Chilean fresh salsa, instead of tomato sauce and finish with a little merkén, a smoked Mapuche chili powder.

Approximate amounts per person when the pizzetas share the table with other finger foods.

| Occasion | Pizzetas per person | For 20 people |
| --- | --- | --- |
| Kids’ birthday party | 3 to 4 | 60 to 80 (two to three batches of dough) |
| Once or casual adult get-together | 4 to 5 | 80 to 100 (three batches of dough) |
| Cocktail party with several finger foods | 2 to 3 | 40 to 60 (two batches of dough) |

## Frequently Asked Questions (FAQs)

### 1. How Do You Make Easy Pizzeta Dough?

Just mix 500 g of flour, 10 g of dry yeast, 300 ml of warm water, 3 tablespoons of oil, salt and 1 teaspoon of sugar. Knead for 8 to 10 minutes until smooth and let it rest, covered, for 1 hour. You do not need a stand mixer, and the same dough works for large pizzas.

### 2. How Many Pizzetas Does Half a Kilo of Flour Make?

With 500 g (about 1 lb) of flour and rounds 7 to 8 cm (3 inches) across rolled 0.5 cm (¼ inch) thick, you get about 30 to 35 pizzetas, gathering and rerolling the scraps. If you cut them 5 to 6 cm (2 inches) across, as cocktail bites, you get around 55 to 60.

### 3. Why Are My Pizzetas Raw on the Bottom?

It is almost always because the sauce goes on the raw dough and soaks it before it cooks. Baking the plain rounds for 5 minutes before topping them solves it. Using little sauce, one teaspoon per pizzeta, and baking in an oven fully preheated to 220°C (428°F) also helps.

### 4. Can You Make Pizzetas Without Yeast?

Yes, by replacing the yeast with 4 teaspoons of baking powder. The dough needs no rest and comes out more like a cracker, crisp and less fluffy. It is a good option when you are short on time, although the yeast version has better flavor.

## What Is Mini Pizzas?

Pizzetas are bite-size individual pizzas, about 7 to 8 cm (3 inches) across, made from the same yeast dough as a regular pizza. In Chile they are a party food, topped with a spoonful of tomato sauce, grated cheese and oregano, sometimes with ham or olives, and baked until the edges are golden. They are served warm at birthday parties, at once and at casual get-togethers.

## History of Mini Pizzas in Chile

Pizza arrived in South America with Italian immigration and adapted to each country. In Chile the small version, the pizzeta, became a common bite for parties and family celebrations, made with the same dough as a large pizza but in individual portions.

## Did You Know?

The word pizzeta comes from the Italian pizzetta, the diminutive of pizza, which means a small pizza. That is why in Chile it is used for these individual pizzas of two or three bites, as opposed to the family-size pizza that is cut into slices.
