Chilean panqueques with manjar are thin, flexible crepes made from a batter of milk, flour, eggs, melted butter, and salt, spread with manjar, Chile’s dulce de leche, then rolled or folded and dusted with powdered sugar. They take 20 minutes of preparation, plus resting time for the batter, and about 20 minutes of cooking, and serve 6.

They are one of the most beloved and traditional desserts of the Chilean afternoon tea called once, quick, reliable, and comforting.

## How to Make Panqueques with Manjar?

Panqueques are the Chilean equivalent of French crêpes. The batter is blended until smooth and ideally rested in the fridge, then cooked in a thin layer in a lightly oiled pan, flipped, and stacked. Each crepe is spread with softened manjar and rolled or folded.

## Homemade Chilean Panqueques with Manjar Recipe

**Preparation:** 20 minutes (plus 2 hours resting)
**Cooking:** 20 minutes
**Servings:** 6

### Ingredients

- 500 g (1½ cups) of manjar (dulce de leche)
- 300 ml (1¼ cups) of milk
- 100 g (¾ cup) of all purpose flour
- 3 eggs
- 2 tablespoons of butter, melted
- ¼ teaspoon of salt
- Powdered sugar, to dust
- Oil for the pan

### Instructions

1. In a medium bowl, mix the manjar with about 30 ml of the milk until it is soft and spreadable. In a large bowl, combine the melted butter and the rest of the milk, add the sifted flour, eggs, and salt, and mix with a wooden spoon or immersion blender until smooth. Ideally, refrigerate the batter for about 2 hours.

1. Heat a 20 to 25 cm nonstick skillet over medium heat with a few drops of oil spread with a paper towel. Pour in half a ladle of batter and swirl to cover the pan. Cook for 1 to 2 minutes, until the edges start to lift, flip with a plate or wide spatula, and cook 1 minute more. Slide onto a plate and keep covered.
2. Repeat with the rest of the batter. Spread each panqueque with about two tablespoons of manjar over half its surface, then roll it up or fold it in four. Serve right away, dusted with powdered sugar and, if you like, drizzled with chocolate or raspberry sauce.

## Additional Tips

### Use lukewarm milk

Milk that is slightly warm, not hot, helps the melted butter blend into the batter for softer, more elastic crepes.

### Rest the batter

Refrigerating the batter for at least 2 hours, or overnight, lets the air bubbles disappear and the flour hydrate fully, giving thinner, more even crepes.

### The first one is a test

The first panqueque often comes out uneven while the pan reaches the right temperature. Use it to adjust the heat.

| Original ingredient | Substitute | Ratio | Flavor note |
| --- | --- | --- | --- |
| Manjar | Quince paste thinned with hot water | 1:1 | Fruitier |
| Manjar | Berry jam | 1:1 | Tangier, lighter |
| All purpose flour | Whole wheat or oat flour | 1:1 | More fiber |
| Manjar | Ricotta with honey | 1:1 | Less sweet |

## Frequently Asked Questions (FAQs)

### 1. Can I replace the manjar?

Yes, use quince paste thinned with a little hot water, berry jam, or ricotta with honey for a less sweet option. A creamy filling keeps the crepes from tasting dry.

### 2. How do I keep the panqueques from tearing?

The pan should be hot but not smoking. Use enough batter to cover the pan and flip carefully with a thin nonstick spatula.

### 3. How do I make fluffier panqueques?

Add 1 teaspoon of baking powder to the dry ingredients and fold in the egg whites beaten to stiff peaks. Cook right away.

### 4. How should I store them?

Stack the unfilled crepes, cover them well, and refrigerate for up to 2 days. Fill them with manjar just before serving.

## What Is Manjar?

Manjar is the Chilean name for dulce de leche, milk and sugar cooked slowly until thick and caramel colored. It is the most traditional filling for panqueques, alfajores, and many Chilean cakes.

## History of Pancakes

Thin pancakes made from flour, milk, and eggs are among the oldest prepared foods, with sweet versions already known in ancient Rome. The French crêpe became the model for the Chilean panqueque.

## Did You Know?

The name manjar blanco recalls the medieval European blancmange, a white sweet cream once made with almond milk and sugar, although Chilean manjar is a milk caramel.
