Preserved changles are Chilean wild coral mushrooms simmered in a mix of apple cider vinegar and water with garlic and bay, then packed into sterilized jars and covered completely with neutral oil. It takes 20 minutes of preparation plus 20 minutes of cooking and fills enough jars for 6 servings.

The vinegar lowers the pH and the oil seals out air, which is how the jars keep for up to 12 months in a cool dark pantry. It is the standard way of having changles on hand out of season for empanadas, stews, and scrambled eggs.

## How to Make Preserved Changles?

This preserving technique keeps changles in perfect condition for up to 12 months, ideal for making dishes such as the outstanding changles empanadas.

## Homemade Chilean Preserved Changles Recipe

**Cooking:** 20 minutes
**Servings:** 6 people

### Ingredients

- 1 kg (2.2 lb) of changle mushrooms
- 750 ml (3 cups) of apple cider vinegar
- 750 ml (3 cups) of water
- 1 liter (4 cups) of sunflower oil
- 2 bay leaves
- 2 garlic cloves
- Half a teaspoon of pepper
- Half a teaspoon of salt

### Instructions

1. Wash the changles in cold water and remove any dirt clinging to them. In a medium pot, add the water, the apple cider vinegar, the pepper, the bay leaves, the garlic, and the salt. Heat over high heat and bring to a boil.

1. Distribute the changles among clean, sterilized glass jars, tuck the bay leaves and garlic cloves inside without packing them too tightly, and fill with sunflower oil until they are completely covered.

1. Close the jars and store them in a cool, dry place for up to 1 year. Serve as an accompaniment to appetizers, salads, or main dishes, and keep them refrigerated once opened.

## Additional Tips

### Blanch them first

Dip the changles for a minute in boiling salted water and then move them into an ice water bath. This blanching helps fix their color and firmness before they go into the vinegar.

### Cool the jars fully

Let the jars cool completely before storing them, to avoid internal condensation that would create unwanted moisture and spoil the quality of the preserve.

### Cover them completely with oil

Any piece of mushroom left above the oil line is exposed to air and is where spoilage starts. Top up the jar until everything is submerged, then tap it to release trapped bubbles.

| Original ingredient | Substitute | Ratio | Flavor note |
| --- | --- | --- | --- |
| Changles | Diguenes or oyster mushrooms | 1:1 | Softer, less coral-like texture |
| Apple cider vinegar | White wine vinegar | 1:1 | Sharper, less fruity |
| Sunflower oil | Canola oil | 1:1 | Equally neutral, stays clear when cold |
| Bay leaves | Thyme sprigs | 1:1 | More herbal, less resinous |

## Frequently Asked Questions (FAQs)

### 1. Which oil is best for preserving changles?

Although the recipe uses sunflower oil, a neutral tasting oil such as canola, or a blend of sunflower with a light extra virgin olive oil, works best. Pure olive oil can turn cloudy or solidify at refrigerator temperatures.

### 2. Is it safe to store them at room temperature?

Yes, if the jars have been properly sterilized and vacuum sealed, they can be stored in a cool dark place such as a pantry. Once a jar is opened, however, it must be refrigerated and eaten within 2 to 3 weeks.

### 3. Why is vinegar needed in the cooking?

Vinegar is an essential preserving ingredient. Its acidity lowers the pH of the changles, which inhibits bacterial growth and dramatically extends the shelf life of the preserve before it is sealed in oil.

### 4. How do I clean changles properly before cooking?

Changles grow on the ground and collect soil. Wash them gently under cold running water or soak them for a couple of minutes, then drain. Make sure to remove any leaves or dirt caught in their branches without damaging them.

### 5. Can I use preserved changles in stews or empanadas?

Yes. Once out of the oil they only need draining. They are ready to be chopped and added to empanada fillings, stews, or scrambled eggs, and need no extra cooking, only warming through.

## What Are Changles?

Changles, botanically Ramaria flava, are wild edible mushrooms that grow in the temperate forests of southern Chile, easily recognized by their branched yellow shape that looks like sea coral. They have a short season, which is exactly why preserving them in jars is such an established practice in southern households.

## Gathering Changles

Changles are gathered by hand in the forest during their brief season, and the cleaning step matters more than with cultivated mushrooms because soil lodges between the branches. The traditional handling is to rinse them the same day they are picked and either cook them straight away or preserve them.

## Did You Know?

Changles usually grow in the shade of colihue canes and oak trees, on decaying organic matter, where their yellow branches stand out against the damp earth with a shape very like sea coral.
