Chilean pronto alivio, also called mejórate pronto, is a homemade digestif made by pressing fresh white grapes, straining the juice, mixing 2 parts of juice with 1 part of grape aguardiente in a glass or clay container, and resting it in a dry, dark place for at least 30 days. It takes 30 minutes of preparation plus 30 days of resting and makes 8 servings.

It is a traditional preparation from Quillón and other wine-growing areas of the Ñuble region, made once a year at the grape harvest.

## How to Make Pronto Alivio?

Pronto alivio is made once a year during the harvest, between March and April, with freshly picked grapes, and stored to be sipped throughout the year as a digestif. The aguardiente stops the juice from fermenting, keeping its natural sweetness.

## Homemade Chilean Pronto Alivio Recipe

### Ingredients

- 4 kg (8.8 lb) of white grapes, preferably Italia
- 1 liter (4 1/4 cups) of grape aguardiente
- Ice cubes, to serve

### Instructions

1. Press the juice from the white grapes, preferably the Italia variety, using healthy, ripe fruit. Strain out the seeds, measure the juice, and set aside.

1. In a glass or clay container with a lid, pour in the freshly pressed grape juice and the aguardiente in a 2 to 1 ratio, 2 parts juice to 1 part aguardiente.

1. Stir gently and rest in a dry, dark place for at least 30 days. Serve in small aperitif glasses, over ice if you like, before or after meals.
