### Ingredients

- 100 ml (⅓ cup plus 1 tablespoon) of white wine

- 1 liter (4 cups) of chicken broth
- 1 tablespoon of oil
- ½ onion, finely chopped
- Fresh parsley

**Mushrooms**

- 30 g of gargal mushrooms
- 16 digüeñes
- 8 dried morels
- 100 ml (⅓ cup plus 1 tablespoon) of cream
- 50 g (½ cup) of grated parmesan
- 2 tablespoons of butter
- 1 teaspoon of merkén

### Instructions

1. Soak the morels in boiling water, let cool, and reserve 200 ml of the liquid for the risotto. In a medium skillet, melt the butter and add the digüeñes, gargales, morels, and merkén, and season with salt and pepper. Stir gently and cook for a few minutes over medium heat, then add the cream and cook for one more minute. Turn off the heat and set aside.

1. In a medium pot, combine the chicken broth and the reserved morel liquid, bring to a boil, and keep hot. In another pot, heat the oil and butter, add the chopped onion, and sauté for about 2 minutes without browning. Add the rice and toast for 1 minute until the grains separate, then pour in the white wine and let the alcohol evaporate.

### Sauté each mushroom right

Digüeñes need only 2 to 3 minutes, gargales 4 to 5 minutes, and rehydrated morels 5 to 6 minutes, so add them to the pan in that reverse order.

### Keep stirring

Stirring constantly while adding the broth rubs the grains together and releases the starch that makes risotto creamy.

### Serve it all’onda

Risotto should flow gently on the plate like a wave. If it is too dry, add a last splash of hot broth and a knob of cold butter before serving.
