It needs very few steps and ingredients: cream, a chocolate bar of the bitterness you like, egg whites, and sugar. Fold gently so the mousse keeps its air.

- 3 egg whites
- 3 tablespoons of sugar

### Instructions

1. Heat a little water in a small pot and set a bowl over it for a water bath. Add the cream and the chopped chocolate and stir gently with a spatula until smooth.

1. In a medium pot, combine the egg whites and sugar over the lowest heat and whisk vigorously for about 3 minutes, lifting the pot off the heat every minute so they do not cook. Transfer to a stand mixer and beat for about 5 minutes, until doubled in volume.
