## How to Make Evaporated Milk?

Evaporated milk is made by removing part of the water from whole milk, concentrating its flavor and texture. The milk is brought to a boil and then kept at the gentlest simmer until it has reduced to about half.

## Homemade Evaporated Milk Recipe

### Ingredients

- 2 liters (8½ cups) of whole milk
- 4 tablespoons of sugar (optional)

1. Pour the milk into a large nonstick pot and heat over medium heat. Add sugar if you like and stir until dissolved. Raise the heat and bring the milk to a boil without letting it boil over, then lower the heat to the minimum.

1. Keep it at a bare simmer for about 90 minutes, stirring occasionally, until it reduces to about half. Remove from the heat and let cool to room temperature before storing in sterilized, airtight jars in the fridge.

## Additional Tips

### Evaporate, do not boil

Keep the heat at the absolute minimum. A rolling boil can break the proteins and separate the fat, leaving a watery texture.

### Strain it
