It needs only basic ingredients, bones and heads of fresh white fish such as hake, conger, or corvina, plus vegetables and herbs, cooked gently to draw out their flavor.

### Ingredients

- 500 g of fish bones and heads
- 2 garlic cloves
- 2 tablespoons of olive oil
- 1 medium onion
- 1 carrot
- 1 celery stalk
- 1 ripe tomato
- 1 bay leaf
- 1 sprig of fresh thyme
- 1 sprig of fresh parsley
- 1 liter (4¼ cups) of water
- 1 glass of white wine
- Fine sea salt
- Black pepper

### Instructions

1. Rinse the fish bones and heads well under cold water and set aside. Peel and chop the onion, carrot, celery, and garlic, and dice the tomato. Heat the olive oil in a large pot over medium heat, add the onion, garlic, celery, and carrot, and sauté for 5 minutes until tender.

1. Cover with the liter of water and season with salt and pepper. Bring to a boil, then lower the heat and simmer for 30 minutes with the pot partly covered, stirring as little as possible so the stock stays clear.
