2. In a medium pot, combine the washed rice with 600 ml of cold water, heat on high, cover, and bring to a boil. Lower the heat to the minimum and cook for 20 minutes without uncovering, then turn off the heat and let rest for 15 minutes on a cold burner.
3. Transfer the rice to a plastic bowl, add the vinegar, sugar, and salt, mix gently, and let rest at least 30 minutes before making sushi.
