## Homemade Mapuche Cocimiento de Verduras Recipe

**Preparation:** 45 minutes
**Cooking:** 45 to 60 minutes
**Servings:** 6

### Ingredients

- 1 kg of potatoes, diced
- 500 g of porotos quebrados
- 500 g of green beans
- 500 g of winter squash, chopped
- 6 pork ribs
- 4 garlic cloves, chopped
- 4 chard leaves, chopped
- 1 small carrot, chopped
- 1 piece of onion, chopped
- 1 cup of corn kernels
- 1 cup of fresh shelled beans (porotos granados)
- 1 teaspoon of ground cumin
- 1 sprig of oregano
- ½ small cabbage, chopped
- ½ teaspoon of ají de color (Chilean paprika)
- Oil
- Salt and pepper

### Instructions

1. Season the ribs with the garlic, cumin, oregano, and salt and pepper to taste. Sear them in a little oil in a large, deep pot over medium heat until browned on all sides.
2. Add the green beans, porotos quebrados, shelled beans, corn, chopped chard and onion, cabbage, and carrot, and finish with the diced potatoes and squash. Cover everything with boiled water, add the ají de color, taste and adjust the seasoning, cover the pot, and cook over medium low heat for 45 to 60 minutes, stirring gently from time to time, until everything is fully cooked.
3. Serve the cocimiento right away, piping hot, with pan amasado or catutos.

## Additional Tips

### Layer by cooking time

Put the firmest vegetables in first and the potatoes and squash on top. This way the squash softens and thickens the broth without turning everything into a purée.

### Make it without meat

The ribs are optional. For a vegetarian version, add the garlic, cumin, and oregano directly to the water so the broth keeps its flavor.

### Use what the season offers

Cocimiento is meant to change with the harvest. Swap in whatever vegetables are fresh, such as peas, fava beans, or zucchini.

| Original ingredient | Substitute | Ratio | Flavor note |
| --- | --- | --- | --- |
| Pork ribs | Smoked pork ribs | 1:1 | Smokier, deeper broth |
| Pork ribs | Chicken thighs | 6 pieces | Lighter flavor |
| Winter squash | Sweet potato | 1:1 | Sweeter, creamy |
| Ají de color | Merkén | ¼ teaspoon | Smoky and spicy |
