## Chilean Candied Peanuts Recipe

**Prep time:** 15 minutes
**Cook time:** 20 minutes
**Servings:** 4

### Ingredients

- 500 g of raw peanuts with skin
- 2 cups of sugar
- 1 cup of water
- 1 teaspoon of cinnamon
- 1 teaspoon of cocoa powder

### **Preparation**

1. Line a baking tray with aluminum foil, parchment paper, or a Silpat, and preheat the oven to 180°C (356°F) for at least 10 minutes. In a large pot, combine the peanuts, sugar, cinnamon, and cocoa, then pour in the water and stir until dissolved.
2. Heat over medium heat, stirring occasionally, until it reaches a vigorous boil. Continue cooking until the mixture begins to dry and takes on a caramelized, sandy texture.
3. Pour the peanuts onto the baking tray, spreading them evenly with a spatula or wooden spoon, and let them cool at room temperature. Place the tray in the oven for about 20 minutes, until the caramel is dry and crunchy.
4. Monitor the cooking process closely, as the caramel can burn easily. Remove from the oven, let cool to room temperature, and serve cold, either alone or as a topping for desserts like ice cream and cakes.

## Additional Tips

Avoid using roasted peanuts, as they may burn quickly and develop an undesirable bitter taste.

## Health Benefits and Properties

- Peanuts contain no trans fats, added sugar, or sodium. Most of their fats are monounsaturated and polyunsaturated, which are beneficial for cardiovascular health.
- Rich in folic acid, peanuts support healthy ovulation before pregnancy and contribute to normal baby development, reducing the risk of pregnancy complications.
- High in natural fiber, peanuts aid digestion and help lower blood cholesterol levels.

## Did You Know?

Candied peanuts are a traditional treat found in nut shops across Chile and are commonly sold by street vendors in parks, plazas, and beaches, always made artisanal-style.
