- 2 blood sausages
- 2 onions
- 2 marraqueta rolls (or crusty bread)
- 100 ml of cream
- 2 tablespoons of walnuts
- 1 tablespoon of blue cheese
- 1 tablespoon of sugar
- 1 tablespoon of vinegar
- 1 sprig of oregano
- Olive oil
- Arugula leaves
- Fine salt
- Black pepper

### Preparation Steps

1. Heat the cream until it reaches a boil, then add the crumbled blue cheese. Turn off the heat and stir until the mixture becomes smooth and homogeneous. In a large skillet, heat a splash of olive oil and cook the onions over low heat until caramelized.
2. Add the sugar and season with salt and pepper to taste. Cook for a couple more minutes, add the vinegar, stir, and turn off the heat. In a medium pot, place the blood sausages with ¼ of an onion and the oregano, boil for 10 minutes, then remove, peel, and set aside.
