## How to Make Rice Pudding?

Rice pudding is a typical dish in many countries, always based on slow-cooking rice in milk and served at different temperatures depending on the region, usually dusted with cinnamon, vanilla, or citrus zest.

## Homemade Rice Pudding Recipe

### Ingredients

- 1 liter of whole milk
- 100 g of long-grain rice
- 70g of sugar
- 2 cloves
- 1 cinnamon stick

### Preparation Steps

1. Rinse the rice in a colander under cold running water until it releases all its starch and drains transparently. Set aside. In a medium-sized, thick-bottomed pot, heat the milk over medium heat, and add the whole cloves and cinnamon stick if you don’t want it too spiced.

1. Add the rice to the pot with the milk, cook for about 30 minutes, stirring every 1 or 2 minutes to prevent the rice from sticking to the bottom of the pot, making sure the milk does not come to a boil.

1. Check that the rice is cooked and the milk has reduced to about half, stirring every 1 to 2 minutes, add the sugar, and cook for an additional 3 minutes. Remove from heat and cool. Serve the chilled and cold rice pudding, preferably the next day, optionally sprinkled with an additional touch of cinnamon.

## Vegan Rice Pudding

If you want to prepare a vegan version of this traditional dessert, you can replace animal-origin milk with plant-based milk such as almond, soy, or coconut milk.

## Rice Pudding in Thermomix

1. In the Thermomix, place the milk, rice, sugar, cloves, and cinnamon stick. Set it to 90°C for 30 minutes at speed 2, without the lid to allow evaporation and prevent overflow.
2. Check if the rice is cooked, or program an additional cooking time of 5 minutes at the same temperature and speed. Remove the cloves and cinnamon stick and cool.
