The umu ta’o is a ceremonial preparation from Easter Island and one of the most emblematic dishes of Rapa Nui culture. ## How to Make Umu Ta’o from Rapa Nui?

The food is cooked with steam and direct heat over previously heated volcanic stones, covered with leaves to retain moisture and enhance the natural flavors. This process allows pork, fish (such as kana-kana tuna or mahi-mahi), and vegetables to retain their juices and absorb the surrounding aromas.

## Traditional Umu Ta’o Recipe

### Ingredients

- 1 kg of tuna fillet
- 1 kg of pork ribs
- 1 kg of chicken drumsticks
- 500 g of sausages
- 6 medium potatoes
- 3 medium sweet potatoes
- 6 ripe bananas
- 2 small pineapples
- 3 white onions
- Banana leaves
- Coarse salt
- Black pepper
- Local herbs

### Preparation Steps

1. Clean all the fresh ingredients thoroughly. Choose an outdoor space and dig a pit about 60 cm deep and 80 cm wide. Build a fire in the pit using dry wood and heat the volcanic stones for at least 2 hours until they are red-hot. Meanwhile, season the meats with coarse salt and pepper and let them rest.
2. Wrap each type of meat and vegetable separately in banana leaves or aluminum foil, forming sealed parcels. Once the stones are ready, remove the firewood and place a first layer of hot stones at the bottom of the pit.
3. Start layering with pork and chicken parcels, then sausages, followed by potatoes and sweet potatoes, and finally fish and fruits like pineapple and bananas. You can add aromatic herbs between layers to enhance the flavor.
4. Completely cover with banana leaves and then with damp sacks or a tarp to trap the steam. Cover the pit with soil and let it cook for 2 to 3 hours. Carefully uncover and remove the parcels, open them, and serve hot in deep bowls.

## Why Are Volcanic Stones Used?

Volcanic stones are used because they are porous and abundant on the island, allowing even heat retention and distribution. It’s important to ensure they are completely dry before use.

## Can It Be Made in an Oven or Grill?

There are adapted versions prepared in clay ovens or closed grills, but they lose much of the ceremonial character and the unique flavor that comes from underground cooking with hot stones.

## How Is Umu Ta’o Different from the Chilote Curanto?

Although both dishes use hot stones and are cooked underground, umu ta’o does not include seafood and stands out for its use of tropical fruits such as banana and pineapple. It also follows a more hierarchical and symbolic structure in how ingredients are arranged.
