Ingredients

  • 500 g (1.1 lb) of raspberries
  • 350 g (1 3/4 cups) of sugar
  • 1 lemon

Instructions

  1. Sort the raspberries and remove any damaged fruit, stems, or leaves. If they are dirty, soak them in water with a few drops of vinegar in a sieve for 3 minutes, then rinse and drain on paper towels.

  1. In a medium pot, ideally copper, add the raspberries, sugar, and a squeeze of lemon juice, and heat over low heat for about 10 minutes, stirring now and then.

  1. By now the fruit will have released its juices, and you can mash it with a fork if you like. Either way, keep cooking for another 30 to 40 minutes until the jam reaches the consistency you want.

  1. Pour the hot jam into sterilized glass jars, close them, and let them cool upside down to seal. Store in a cool, dry place and refrigerate once opened.

Put a teaspoon of jam on a saucer in the freezer for a minute, then push it with your finger; if it does not run back together, it is ready.

Good quality frozen raspberries work well when you cannot find fresh ones.
