Ingredients

  • 4 cups of mixed berries
  • 200 g (1 cup) of granulated sugar
  • 125 ml (½ cup) of milk
  • 15 g (2 tablespoons) of cornstarch
  • 4 egg yolks
  • 2 tablespoons of butter
  • 1 cup of whipped cream
  • 1 tablespoon of powdered sugar
  • Fine salt

Instructions

  1. In a small pot, bring the milk to a boil and remove from the heat. In a medium bowl, whisk the yolks, half the granulated sugar, and the sifted cornstarch until pale yellow, then add the hot milk a spoonful at a time, whisking gently, and then faster.

  1. Return to the pot over low heat, stirring until thick and creamy. Remove from the heat, add the cubed butter and the salt, and stir until fully combined. Transfer to a large bowl.

  1. Press plastic wrap onto the surface so no skin forms and refrigerate until completely cold. Fold in the whipped cream. In a small bowl, toss the berries with the tablespoon of powdered sugar and fold half of them into the cream.

  1. Preheat the oven broiler to 180°C (356°F). Spread the mixture in a gratin dish, arrange the rest of the berries on top, sprinkle with the remaining sugar, and broil for 10 to 15 minutes until golden and set. Serve right away.
