- 2 carrots, cut into sticks
- 2 celery stalks, chopped
- 2 onions, thinly sliced
- 2 tomatoes, diced
- 1 tablespoon of oregano
- 1 tablespoon of aji de color
- 1/2 red bell pepper, in strips
- Water
- Olive oil
- Fine salt
- Pepper
For the sandwiches
- 4 marraquetas
- 2 avocados, mashed
- 2 large tomatoes, sliced
- Homemade mayonnaise
- Chili cream (optional)
Instructions
- On a cutting board, trim any excess fat from the beef. With a long, thin knife, make small holes all over the meat and insert the carrot sticks, the celery, and the whole garlic cloves.

- In a pressure cooker, heat the olive oil over medium heat and sear the beef evenly until lightly browned. Add the onions, the bell pepper, the diced tomato, the oregano, the aji de color, the tomato sauce, and salt and pepper to taste, stir with a wooden spoon, and cook for about 10 minutes uncovered.
- Add the wine and then enough water to cover, close the cooker, and cook over low heat for 60 minutes from when it comes to pressure. Turn off the heat and let it rest for 10 minutes before opening. Transfer the beef to a board, slice it 1/2 cm thick with a sharp knife, and keep the slices submerged in the cooking juice.

- Warm the marraquetas in the toaster until lightly crisp and lay 2 or 3 slices of mechada with its juice on the bottom half, then a slice of tomato, a generous portion of avocado, and mayonnaise to taste. Cover with the top of the bread, press gently, and serve right away.
