Additional Tips

Squeeze the chard

Steamed chard holds a lot of water. Drain it very well, even pressing it with a clean towel, so the budin does not turn watery.

Add a pinch of nutmeg

A little nutmeg or a spoonful of crumbled blue cheese adds aromatic depth and lifts the chard without overpowering it.

Make it vegetarian

Replace the ground beef with sauteed mushrooms or cooked lentils for a meatless version.

Frequently Asked Questions (FAQs)

1. What is the secret to a budin that is not watery?

Draining the chard well. Squeeze it thoroughly, using a clean kitchen towel if needed, before adding it to the egg and milk mixture.

2. What other cheeses can I use for the topping?

Use a mix. Parmesan gives a more golden, salty crust, while queso mantecoso or mozzarella gives a stretchier, meltier topping.

3. Can I use spinach instead of chard?

Yes. Spinach is more tender and needs only a quick blanch or about 5 minutes of steaming; drain it very well, just like chard.

4. Can I prepare the mixture ahead?

Yes. Prepare the full mixture unbaked in its dish, cover with plastic wrap, and refrigerate for up to 24 hours.
