  • 200 g (1 cup) of sugar
  • 120 ml (1/2 cup) of lemon juice
  • 2 eggs
  • 2 tablespoons of butter, softened
  • 1 teaspoon of baking powder
  • 1 teaspoon of lemon zest

Instructions

  1. In a large bowl, beat the room temperature eggs and butter with a mixer at medium speed until creamy, then add the sugar and keep beating until dissolved.

  1. Add the room temperature milk little by little, mixing at medium speed. Add the flour and baking powder, sifted together, the lemon juice, and the lemon zest, and mix again.

  1. Pour the batter into a greased tin and tap it gently on the counter to settle. Bake in an oven preheated to 180 C (356 F) for about 40 minutes, or until a wooden toothpick comes out dry.
  2. Let it cool for about 10 minutes before unmolding. Serve fresh, plain or decorated with powdered sugar, meringue, or a lemon glaze.
