Instructions

  1. Clean the salmon portions and season with salt and pepper on a tray. Cut the onions into thin rings and the carrot and leek into julienne. Peel, seed, and dice the tomatoes, slice the mushrooms, and set everything aside.
  2. Mix the vegetables and season with salt and pepper. Cut parchment paper into four 35 x 35 cm (14 inch) squares, place the vegetables on each, and top with a piece of salmon. Add a knob of butter, fresh herbs, 1 tablespoon of fish stock, and an orange segment to each.
  3. Close each parcel carefully and bake in an oven preheated to 200°C (392°F) for 15 to 20 minutes. Serve right away, on its own or with rice or boiled potatoes and a good Chilean white wine.

No parchment?

Foil works but transfers more heat, and blanched banana or cabbage leaves are a natural option; adjust the time slightly.
