
Chilean stuffed potatoes are often one of the favorite dishes among children. They are a kind of thick empanada made of soft, delicious, and hearty mashed potatoes, typically filled with meat or cheese, and can be prepared either fried or baked.

How to Make Chilean Stuffed Potatoes?
You can use any type of potato with a good consistency, although instant mashed potatoes are not recommended. For the best results, it is also recommended to prepare the meat filling (pino) the day before.

Recipe for Stuffed Potatoes with Meat

Ingredients
- 1 kg of cubed potatoes
- 500 g of ground beef
- 4 hard-boiled eggs
- 2 finely chopped onions
- 1 finely chopped garlic clove
- 1 teaspoon of cumin
- 1 teaspoon of oregano
- 1 teaspoon of paprika
- Olive oil
- Oil for frying
- Wheat flour
- Salt
- Pepper
Preparation
- In a large pot, add the potatoes and cover them with plenty of cold water. Add a tablespoon of salt, bring to a boil, and cook for about 20 minutes or until tender. Drain, mash with a fork to form a coarse puree, and set aside.
- In a medium skillet, heat the oil over medium heat and sauté the onions and garlic until they become translucent. Add the ground beef, cumin, oregano, paprika, salt, and pepper to taste. Cook for about 10 minutes, stirring with a wooden spoon, until the meat is well cooked. Let it cool and set aside.
- Flour your hands, take a portion of the mashed potatoes, flatten it, and add a spoonful of the meat filling and a slice of hard-boiled egg in the center. Add a bit more mashed potato on top of the filling, then wrap and seal the filling, dusting with more flour if necessary to prevent sticking.
- In a deep pot or skillet, add enough oil for frying and heat to about 160°C (320°F), or preheat the oven to 180°C (356°F) for about 10 minutes. If you want to fry the stuffed potatoes, carefully submerge them in the hot oil and cook for about 5 to 10 minutes until golden on both sides. Drain on paper towels.
Baked Stuffed Potatoes
To prepare baked stuffed potatoes, place them on a buttered baking sheet and cook for about 15 to 20 minutes, turning them halfway through. Serve the stuffed potatoes immediately, either alone or accompanied by another main dish, optionally with a portion of rice or salad.
Cheese-Stuffed Potatoes
Alternatively, you can replace the meat filling with a cube of Gouda or creamy cheese, resulting in a soft and creamy interior suitable for vegetarians.
