Homemade Torta de Trufa de Chocolate Recipe
Preparation: 30 minutes
Cooking: 60 minutes
Servings: 10 people
Ingredients
Chocolate Sponge
- 3 cups of all-purpose flour
- 3 eggs
- 1 1/2 cups of oil
- 1 1/2 cups of buttermilk
- 1 teaspoon of vanilla
- 1 cup of unsweetened cocoa
- 1 cup of sugar
- 1 teaspoon of baking soda
Chocolate Truffle
- 500 g (17.6 oz) of semisweet chocolate
- 300 g (10.5 oz) of heavy cream
- Sprinkles
Instructions
- Preheat the oven to 180 C (356 F) for at least 10 minutes. Oil a cake pan about 25 cm (10 in) across, line it with parchment, oil the paper, and dust it with flour or cocoa so the cake does not stick.

- In a large bowl, whisk the eggs, oil, buttermilk, and vanilla. In a second bowl, combine the sifted flour, baking soda, and cocoa, pour in the wet mixture, and stir well with a spoon.

- Add all the sugar at once and mix quickly. Pour the batter into the pan and bake for about 1 hour, or until a toothpick inserted in the center comes out clean. Let it cool completely at room temperature before unmolding.

- Melt the chocolate in a double boiler, heat the cream to just below boiling, add it, let it sit for a couple of minutes, and stir until creamy. Unmold the sponge, cut it into two layers, and fill and cover the cake with the truffle cream. Decorate with sprinkles or chocolate shavings if you like.
Additional Tips
Make your own buttermilk
If you do not have buttermilk, add 1 tablespoon of white vinegar to the same amount of whole milk and let it stand for 10 minutes.
Firmer ganache
Use 250 g of cream instead of 300 g, or chill the ganache longer before spreading.
Cool completely
Let the sponge cool fully before cutting so the layers do not crumble.
