Chilean stuffed baked apples, or manzanas asadas rellenas, are green apples hollowed out and filled with walnuts, raisins, sugar, cinnamon, pisco, and the chopped apple trimmings, topped with butter and their own lids, and baked in a dish with a little water until tender. They take 20 minutes of preparation and 45 minutes of baking, and serve 4.
An incredibly easy dessert with a result everyone loves, served with vanilla ice cream or caramel sauce.
How to Make Baked Apples?
Apples, walnuts, raisins, and sugar are combined with touches of cinnamon and Chilean pisco. The cored apples are filled, capped, and baked with water in the bottom of the dish, which creates steam so they cook evenly without drying out or splitting.

Homemade Chilean Stuffed Baked Apples Recipe
Preparation: 20 minutes
Cooking: 45 minutes
Servings: 4
Ingredients
- 4 green apples
- 100 ml (⅓ cup + 1 tablespoon) of water
- 100 g (1 cup) of walnuts
- 80 g (½ cup) of raisins
- 50 g (¼ cup) of sugar
- 2 tablespoons of pisco
- 2 teaspoons of ground cinnamon
- 2 tablespoons of butter
- Vanilla ice cream, to serve
Instructions
- Wash the apples well in cold water, cut off the tops to make lids, and remove the cores with a sharp knife or a fruit corer. Discard the seeds and tough fibers and keep the apple trimmings. Set aside.

- Cut the walnuts into quarters and place them in a medium bowl with the raisins, the apple trimmings, the pisco, the sugar, and the cinnamon, and mix well. Preheat the oven to 170°C (338°F) for at least 10 minutes.

- Fill the apples with the mixture, top each one with half a tablespoon of butter, and cover with the apple lids. Place them in a baking dish and pour the water into the bottom of the dish around them.

- Bake in the preheated oven for about 45 minutes, until tender and the skin starts to wrinkle, without falling apart. The time depends on the size and moisture of the apples. Serve the baked apples in dessert bowls with 1 or 2 scoops of vanilla ice cream.
Additional Tips
Choose the right apple
Granny Smith green apples are ideal for their firmness and balanced acidity, which contrasts with the sweet filling. Fuji or Pink Lady are milder but need only 30 to 35 minutes in the oven.
Do not overfill
Leave about 1 cm (½ inch) free at the top so the filling does not push the apples apart.
Replace the pisco
Dark rum, brandy, or orange juice work instead of pisco. For an alcohol free version, use 1 tablespoon of vanilla extract or 2 tablespoons of honey diluted in water.
| Original ingredient | Substitute | Ratio | Flavor note |
|---|---|---|---|
| Pisco | Dark rum or brandy | 2 tablespoons | Similar warmth |
| Pisco | Vanilla extract | 1 tablespoon | Alcohol free |
| Green apples | Fuji or Pink Lady apples | 4 | Sweeter, bake 30 to 35 minutes |
| Vanilla ice cream | Caramel sauce | To taste | Warm topping |
Frequently Asked Questions (FAQs)
1. How long do baked apples take in the oven?
About 45 minutes at 170°C (338°F) in a preheated oven. They are ready when tender and the skin starts to wrinkle but they still hold their shape. Check them toward the end, since size and moisture change the time.
2. Why is water added to the baking dish?
The 100 ml of water around the apples creates steam while they bake, helping them cook evenly without drying out or splitting. Pour it into the bottom of the dish, not over the apples.
3. What do I do with the apple cores?
Use the trimmings in the filling. Remove the seeds and tough fibers and mix the fruit with the chopped walnuts, raisins, pisco, sugar, and cinnamon before stuffing the apples.
4. How are baked apples served?
In a dessert bowl with 1 or 2 scoops of vanilla ice cream, or with caramel sauce. Serve them straight from the oven, when the contrast between warm apple and cold ice cream is at its best.
Benefits
Baked apples provide fiber, antioxidants, and phenolic compounds that support digestion, along with vitamin C, potassium, and healthy fats from the walnuts.
Did You Know?
Apples fall into two broad groups by use: cooking apples, usually larger and later ripening, and dessert apples, which are eaten raw.
