Ingredients

  • 4 green apples
  • 100 ml (⅓ cup + 1 tablespoon) of water
  • 100 g (1 cup) of walnuts
  • 80 g (½ cup) of raisins
  • 50 g (¼ cup) of sugar
  • 2 tablespoons of pisco
  • 2 teaspoons of ground cinnamon
  • 2 tablespoons of butter
  • Vanilla ice cream, to serve

Instructions

  1. Wash the apples well in cold water, cut off the tops to make lids, and remove the cores with a sharp knife or a fruit corer. Discard the seeds and tough fibers and keep the apple trimmings. Set aside.

  1. Cut the walnuts into quarters and place them in a medium bowl with the raisins, the apple trimmings, the pisco, the sugar, and the cinnamon, and mix well. Preheat the oven to 170°C (338°F) for at least 10 minutes.

  1. Fill the apples with the mixture, top each one with half a tablespoon of butter, and cover with the apple lids. Place them in a baking dish and pour the water into the bottom of the dish around them.

Choose the right apple

Granny Smith green apples are ideal for their firmness and balanced acidity, which contrasts with the sweet filling. Fuji or Pink Lady are milder but need only 30 to 35 minutes in the oven.

Do not overfill

Leave about 1 cm (½ inch) free at the top so the filling does not push the apples apart.

Replace the pisco

Dark rum, brandy, or orange juice work instead of pisco. For an alcohol free version, use 1 tablespoon of vanilla extract or 2 tablespoons of honey diluted in water.
