Salmon and Mandarin Green Salad Recipe

Ingredients

1. Salad

  • 200g fresh salmon
  • 4 mandarins
  • 1 ripe avocado
  • 1 cup spinach
  • 1 small green lettuce
  • 1 small purple lettuce

2. Vinaigrette

  • 4 tablespoons balsamic vinegar
  • 4 tablespoons water
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dill
  • Sea salt
  • Black pepper

Preparation

  1. Remove the skin from the salmon and chop it into 1-2 centimeter cubes. Reserve in the refrigerator.
  2. Wash and tear the lettuce and spinach, drain and spin in a salad spinner. Set aside.
  3. Peel the mandarins, separate the segments, and remove the white parts. Peel and dice the avocado into small 1-centimeter cubes. Set aside.
  4. In a large salad bowl, add the lettuces and spinach, incorporate the mandarins, avocado, and gently toss everything.
  5. In a medium bowl, mix balsamic vinegar, olive oil, Dijon mustard, Worcestershire sauce, dill, water, salt, and pepper to taste. Stir to combine.
  6. Pour the vinaigrette over the salad bowl and mix well with wooden spoons. Let it rest for a couple of minutes to blend aromas and flavors.
  7. Serve the green salad with salmon and mandarins immediately, and offer a little extra vinaigrette in a small pitcher for seasoning according to personal preference.
