Chilean honey bread, or pan de miel, is a spiced loaf made with flour, honey, condensed milk, rum, cinnamon, clove, and nutmeg, leavened with baking soda and baking powder and dusted with powdered sugar. It takes 15 minutes of preparation and about 45 minutes in the oven, and serves 6.
It is an old Chilean home recipe, easy to make and good at any time of day and any season, especially with a cup of coffee or hot chocolate.
How to Make Chilean Honey Bread?
Pan de miel needs no yeast or rising time. The egg, butter, honey, condensed milk, water, spices, vanilla, and rum are blended until smooth, mixed into the flour with the leaveners, kneaded briefly, pressed into a loaf pan, and baked until lightly golden.

Cooking: 45 minutes
Servings: 6
Ingredients
- 500 g (4 cups) of all purpose wheat flour
- 200 g (⅔ cup) of honey, softened
- 150 ml (⅔ cup) of water
- 100 ml of sweetened condensed milk
- 2 tablespoons of rum or Chilean pisco
- 1 tablespoon of butter, softened
- 1 tablespoon of ground cinnamon
- 1 teaspoon of vanilla extract
- 1 teaspoon of baking soda
- 2 teaspoons of baking powder
- ½ teaspoon of ground cloves
- ½ teaspoon of ground nutmeg
- 1 egg
- Powdered sugar, for dusting
Instructions
- In a blender, blend the egg and softened butter for 10 to 20 seconds until combined. Add the softened honey, condensed milk, water, cinnamon, cloves, nutmeg, vanilla, and rum and blend again until smooth. Set aside.

- In a medium bowl, sift the flour with the baking soda and baking powder and mix with a wooden spoon. Add the blended mixture and stir until everything comes together.

- Turn the mixture out onto a smooth, floured surface and knead briefly until the dough is soft and even. Transfer it to a buttered rectangular loaf pan and spread it out with your hands.
- Bake in an oven preheated to 200°C (392°F) for about 45 minutes, or until lightly golden. Let it cool for 5 minutes, unmold, and dust with powdered sugar. Serve fresh and sliced, with a cup of coffee or hot chocolate.

Additional Tips
Why both baking soda and baking powder
Honey is acidic, so the baking soda reacts with it and releases carbon dioxide, which helps the dough rise and gives the bread a deeper golden color. The baking powder provides the rest of the lift.
Emulsify the egg and butter first
Blending the egg with the softened butter creates a stable base, so the honey and condensed milk blend in evenly and the spices do not end up concentrated in one spot.
Do not overwork the dough
Knead only until the dough is even. Working it too much after adding the flour develops the gluten and makes the bread dense and heavy.
| Original ingredient | Substitute | Ratio | Flavor note |
|---|---|---|---|
| Rum | Chilean pisco | 1:1 | Fruitier, very traditional |
| Light honey | Dark honey or ulmo honey | 1:1 | Stronger, survives baking better |
| Condensed milk | Dulce de leche (manjar) | 1:1 | More caramel flavor |
| Ground cloves | Ground allspice | 1:1 | Warmer, milder |
Frequently Asked Questions (FAQs)
1. Can I replace the rum with pisco?
Yes, it is a very common swap in the traditional Chilean version. Pisco adds a different fruity note that goes beautifully with meadow or ulmo honey.
2. Why did my honey bread turn out dense or heavy?
This usually happens when the honey was not soft enough when mixed, or when the dough was overworked after adding the flour. Knead only until it is even so you do not overdevelop the gluten.
3. How long does honey bread stay fresh?
Thanks to honey, which is acidic with a pH between 3 and 4.5 and has low water activity, this bread stays moist and mold free much longer than ordinary bread. It keeps for up to a week in an airtight container.
4. What type of honey is best?
Any natural honey works, but darker honeys usually have a stronger flavor that holds up better in the oven. If your honey has crystallized, warm it gently in a water bath before using it.
Why Does Honey Never Spoil?
Honey is mostly sugar and very little water, and because sugar is hygroscopic it draws moisture away from microorganisms, so very few can survive in it. Honey is also acidic, with a pH between roughly 3 and 4.5, which makes it an even more hostile environment for bacteria.
What Is Pan de Miel?
Pan de miel is a dense, spiced honey loaf, closer to a cake than to a yeast bread. It belongs to the same family as the honey breads of European tradition, such as German lebkuchen and French pain d’épices, and in Chile it is a homemade favorite for breakfast and afternoon tea.
Did You Know?
Honey breads are among the oldest sweet baked goods. Cakes sweetened with honey were already made in antiquity, long before sugar became widely available in Europe.
