Additional Tips

Strain the seeds or not

Strain the pulp for a smoother topping, or keep some seeds for a nice look and a little crunch.

Make it firmer

For clean slices, increase the gelatin to 14 g and chill for 8 hours.

Use full fat cream cheese

Full fat block cream cheese gives the best structure. Avoid whipped or spreadable types with stabilizers.

Frequently Asked Questions (FAQs)

1. Which cream cheese is best?

Philadelphia style or any full fat cream cheese gives better structure and flavor. Avoid whipped or spreadable versions, which may contain stabilizers.

2. How long does it keep in the fridge?

Up to 5 days in an airtight container or covered with plastic wrap. Freezing is not recommended because the texture loses stability.

3. Can I replace the gelatin with agar agar?

Yes, but agar must be boiled. Use 2 g dissolved in 100 ml of water, boil for 1 minute, and add it hot to the mixture.
