Blueberry sauce
- 3 cups of blueberries
- 100 g (½ cup) of sugar
- 50 ml (3½ tablespoons) of cold water
- 1 lemon
- 1 tablespoon of cornstarch
Instructions
- Grind the cookies in a food processor and mix in the melted butter until evenly combined. Press the mixture into a 23 cm (9 inch) round pan with high sides, cover with plastic wrap, and chill for 20 minutes.

- For the filling, combine the cream cheese, sugar, cream, lemon juice, and the gelatin dissolved in the boiled water in a large bowl and mix with a spoon or hand mixer until smooth. Pour into the pan, spread evenly, cover with plastic wrap, and chill for at least 5 hours.

- In a medium pot, combine 2 cups of blueberries, the lemon zest and juice, and the sugar and cook over low heat until the sugar dissolves completely. Add the cornstarch dissolved in the cold water, stir, turn off the heat, and let cool to room temperature.
