Instructions

Confit the garlic
Instead of browning the garlic, cook it in the oil over very low heat, 90 to 100°C (194 to 212°F), for 20 minutes to soften its bite and bring out sweet notes.

Right after adding the lemon and vinegar, whisk for a few seconds to emulsify the oil with the acids for a thicker, more even sauce.
