- Add water up to a third of the capacity and cook for 30 minutes over medium heat, until it is soft but still firm. Remove it, let it cool, and cut it into strips about 2 centimeters thick. Brush a grill over high heat or a well heated griddle with a little oil.

- Spread out the cut udder and cook until golden. Serve immediately as an appetizer with a merken and Chilote garlic sauce, or with a side of boiled potatoes, spicy mashed potatoes, or salads to taste.

Never skip the overnight brine
Resting the whole udder in brine overnight is not optional. The salt penetrates the ducts and the dense connective tissue of the gland, partly denaturing the membrane proteins.
Dry the strips meticulously
Once you take the udder out of the pressure cooker and cut it into strips, pat it completely dry. Wet strips on a hot grill release steam that parboils the meat and blocks the Maillard reaction.
