Chilean Digüeñes Salad recipe


  • 500g of fresh digüeñes mushrooms
  • 1 medium onion
  • Fresh cilantro
  • Lemon juice
  • Safflower oil
  • Salt
  • Pepper


  1. In a large bowl, wash the digüeñes mushrooms thoroughly with plenty of cold water, then dry them on a clean cloth or paper towels and cut them into quarters. Set aside.
  2. Dice the onion into small cubes and soak it in water with salt if necessary. Set aside.
  3. In a large salad bowl, add the chopped digüeñes mushrooms, diced onion, and freshly chopped cilantro.
  4. Add plenty of lemon juice, safflower oil, and season with salt and pepper to taste. Gently toss with a spoon to combine the flavors.
  5. Serve the digüeñes salad immediately, freshly prepared, on its own or as a side dish for other cold or hot dishes.
