Ingredients

  • 4 large melons
  • 4 cups of sugar
  • 1 lemon

Preparation

  1. Cut the melons in half, remove the seeds and fibers, peel, cut the pulp into medium cubes, and reserve in a large pot.
  2. Add ½ cup of water, cover the pot, and cook over medium heat for about 5 minutes. Reduce heat to low and continue cooking, stirring occasionally, until the pulp is very soft and disintegrated, about 20 to 30 minutes.
  3. Place the melon pulp in a clean cloth or a fine filter over a strainer, without pressing, and let the melon juice decant completely by gravity to avoid cloudiness.
  4. Reserve the juice in a medium pot and add 1 cup of sugar for every 2 cups of melon juice. Heat over medium heat, bring to a boil, reduce the heat to low, and maintain – removing any foam that forms on the surface – until the mixture acquires the consistency of a liquid honey, keeping in mind that it will thicken a bit more as it cools.
  5. Incorporate the lemon juice, stir until integrated, and pour the hot mixture into sterilized and airtight jars. Cool to room temperature and keep refrigerated until consumption.
  6. Serve the melon honey as a condiment with toast, flans, pancakes, or all kinds of homemade desserts.
